This is a book after my own heart(As we say in the South.)Katherine's recipes make my mouth water and my mind flood with memories.When she talks about recipes that always show up at a family reunion, I remember them so well that I can taste them.I had to go make collards and cornbread as soon as I got the book. Cooking Collards is a true art, just in case you northerners and west coast folks don't know. These are perfect.Have you ever made a vegetable meal and had collards as one of the veggies. If you haven't, you have to give this a try. There isn't anything as good as fresh veggies and cornbread ( there is a great recipe for cornbread in this book.)
My son's favorite dessert is banana pudding. I will make Katherine's recipe the next time his family comes for dinner.
I have a favorite chicken pot pie recipe, but I know I will try the one in this book because it sounds so perfect. The fried chicken recipe can't be beat. It is like my Grandmother's.

I picked up Katherine's Southern Cooking because I wanted to try something new...and southern cooking is definitely new to me! I absolutely love this book! The recipes are written clearly and are very easy to follow. The first recipe I tried was the Southern Pecan Pie! Fabulous! Katherine includes so many tips, it makes the recipes truly fool-proof.
This recipe book really has it all -- appetizers, breads -- I can't wait to try the cornbread! -- main dishes, side dishes and desserts. I have been introduced to a whole new world of delicious dishes to make for my family and I am thrilled! Fabulous book!
If you like to cook but don't have the time to cook for the family, or would just like to find new recipe to make something new this cookbook is just what you need. Haven't made every recipe but the one's I've made has been delicious. But don't take my word for it, but the cookbook and try it yourself.
I thoroughly enjoyed reading through this book and look forward to trying many of the recipes. I am also a southern cook and remember my mother practically living in the kitchen. When I was a young girl, I watched my mother, but didn't bother to learn her recipes. She made everything from scratch and wrote nothing down. Like most young people, I thought she would live forever and I would have time to learn. When she passed away unexpectedly, I was angry with myself for not learning how to cook like she cooked. So, over the past twenty plus years, I have come to rely on books from true southern cooks to get my favorite recipes.
The recipes are simple. I like the salt pork options for the recipes and the nutritional breakdown towards the end of the book. Growing up, mom cooked everything in pork. Yes, it made everything taste good, but it was not healthy eating and led to her health problems. I use smoked turkey wings and legs as my seasoning option. Lots of flavor and much healthier.

At the end of her cookbook she offers the nutritional comparisons of various fats including bacon grease. Most southerners use bacon grease to cook with, and I can remember saving the can of bacon fat for cooking. The can sat next to the stove. I still use bacon grease for cooking, but I keep it in the refrigerator as bacon grease is now considered a “treat” and used for special meals.

I purchased Katherine's original book "I'll Have The Soup and Salad" and have used it frequently. When I saw she had a new book, "Katherine's Southern Cooking" I immediately purchased it and already have a Hamburger Pie planned for dinner tonight.
Katherine includes a lot of tips and advice along with her recipes that is a boon to those of us who are not as accomplished in the kitchen as she so obviously is. In addition, she includes a bio in her book. As it turns out, I was born and raised 65 miles from where she lives now so Southern Cooking is subject near and dear to my heart. Going through the book last night, I found many recipes that were just like my mother fixed when I was growing up sans fast food. When Katherine talked about cornbread and buttermilk, it brought back a lot of memories. When we have cornbread, we always bake extra and my half has jalapenos in it. The next day, I get the largest glass I can find and about half an onion, crumble the cornbread and add whole milk (We called it "sweet milk" back in the day.) and happily enjoy my meal eating the onion as if it were bread.
